Sunny Side Pepper Eggs
A colorful breakfast of a sunny side up egg inside a bell pepper ring.
salt & pepper
fresh chopped parsley
Carefully slice the bell peppers into four ½-inch rings. Toss out the stem and remove all seeds and white flesh from the pepper rings.
Heat the oil in a skillet on medium. Cook the peppers for 3 minutes.
Turn the peppers over and crack an egg into the center of each ring.
Cover and cook until eggs are done, approximately 7-8 minutes.
Sprinkle eggs with salt and pepper to taste, and garnish with fresh parsley, if desired.
