Cook rice according to package directions. Set aside.
Wash and dry peppers. Cut off the tops with the stem. Make sure peppers can stand. Trim the bottoms, if necessary, to make them flat. Scoop out the insides. Set aside.
Heat 2 tbsp of olive oil in large skillet on medium-high. Add the ground turkey, breaking it up as it cooks. Add in garlic, onions, parsley, and salt & pepper; continue to cook until it begins to brown, pour in cooked rice and tomato sauce. Stir to combine. Remove from heat.
With spoon, fill each pepper with the turkey and rice mix. Set into pre-heated air fryer. Repeat with each pepper. Cook at 380°F for 8 minutes.
Add mozzarella to top of peppers and continue cooking for an additional 2-3 minutes, until cheese is melted. Carefully remove from air fryer and serve.
