It’s very light but wow, is it flavorful. And, it’s healthy. Add in the fact you can be enjoying it in just a few minutes of prep time, well, you just can’t beat all that!
Homemade Vinaigrette Dressing
An important part of this salad is the homemade vinaigrette dressing. It is very simple to make, and only needs a few ingredients you probably already have on hand.
1/2 cup olive oil
2 tbsp Balsamic vinegar
1 tsp Dijon mustard
1/2 tsp Italian seasoning
salt & pepper
In a small glass bowl, whisk together all the ingredients, and there you have it! So simple and so delicious.
Transfer the dressing to a serving bowl and set aside.
Strawberry Fennel Salad
Growing up, my grandparents always served fennel after a meal. I loved it as a kid because it tasted like black licorice. It turns out that it does wonders for your digestive system. I didn’t know it back then, but I’m glad I do now.
Ingredients for Salad:
1 cup fresh strawberries, sliced
1 medium fennel bulb, trimmed and sliced thin
2 cups of arugula, washed and dried
2 cups of baby spinach, washed and dried
4 oz of feta cheese, crumbled
*optionally, fresh basil leaves for garnish*
Arrange the arugula and baby spinach on a serving platter. If you prefer, mix the greens with the dressing before placing it on the serving platter.
Add the strawberries, fennel, and crumbled fennel on top. Serve with the side of dressing.

Strawberry Fennel Salad
- ¼ cup olive oil
- 2 tbsp Balsamic vinegar
- 1 tsp Dijon mustard
- ½ tsp Italian seasoning
- salt & pepper to taste
- 1 cup fresh strawberries, sliced
- 1 medium fennel bulb trimmed and sliced thin
- 2 cups arugula washed and dried
- 2 cups baby spinach washed and dried
- 4 oz feta cheese crumbled
- *optional* fresh basil leaves for garnish
- In a small glass bowl, wisk together all dressing ingredients. Transfer to a small serving bowl and set aside.
- Arrange arugula and spinach on a serving platter. Top the greens with the strawberries, fennel slices and crumbled feta.
- Serve immediately with dressing on the side.
