These cookies are super easy to make, they are bursting with flavor, and perfect for nearly any occasion—whether it’s a casual weekend treat or a delightful addition to an event dessert table.
The first time I made these Strawberry Cheesecake Cookies, it was a total accident—I had extra strawberries and a craving for something sweet but didn’t want to commit to baking an entire cheesecake. A little experimenting later, and these soft, creamy, and fruit-filled cookies were born!
Now, they’ve become a family favorite, and I love whipping up a batch whenever I need a quick and easy dessert that feels extra special.

Strawberry Cheesecake Cookies

Ingredients:
For the Cookies:
1 (14.3 oz.) package of Oreo cookies
8 tbsp. melted butter
For the Cheesecake Filling:
8 tbsp. butter, softened
1 ½ cups creamy peanut butter
1 cup powdered sugar
1 tsp. vanilla extract
How to Make the Cookies
Prepare the Baking Sheet:
Line a large, rimmed baking sheet with parchment paper or a Silpat® baking mat. This helps prevent the cookies from sticking and ensures easy cleanup.
Mix the Cookie Dough:
In a large mixing bowl, combine butter, light brown sugar, and white sugar. Whisk until smooth and fluffy—this should take about 2-3 minutes.
Next, add the egg and vanilla extract, whisking until smooth and well incorporated.

Add Dry Ingredients & Strawberries:
Gradually add the flour, baking soda, and baking powder, folding gently until the dough is fully combined. Be careful not to overmix—this ensures the cookies remain soft.
Gently fold in the diced strawberries, distributing them evenly throughout the dough.
Cool Bean Cooking Tip: Use fresh, ripe strawberries for the best flavor. If your strawberries are extra juicy, lightly pat them dry with a paper towel before folding them into the dough.
Shape the Cookies:
Divide the dough into 12 equal portions and shape each one into a ball. Place them on the prepared baking sheet. Using the back of a spoon or your fingers, press an indent into the center of each cookie—this is where the cheesecake filling will go.
Chill the Dough:
Place the cookie dough in the refrigerator to chill for 30 minutes. This step is crucial because it prevents the cookies from spreading too much while baking.
Cool Bean Cooking Tip: Chilling the dough is essential to prevent spreading—don’t skip this step!
Preheat the Oven:
While the cookies are chilling, preheat your oven to 350°F (175°C).
Prepare the Cheesecake Filling:
In a small mixing bowl, whisk together the softened cream cheese and powdered sugar until smooth and fluffy—this should take about 3-4 minutes.

Fill the Cookies:
Remove the cookies from the refrigerator and fill each indent with the cheesecake mixture. Be generous—it’s what makes these cookies so irresistible!
Bake the Cookies:
Place the cookies in the oven and bake for 13-15 minutes, or until they are golden and slightly puffed.
Let the Cookies Cool:
Remove from the oven and allow the cookies to cool for about 10 minutes before adding the final touch.

Drizzle with Warm Strawberry Jam:
Warm the strawberry jam slightly and drizzle it over the cookies for a beautiful and delicious finishing touch.
Cookie Variations
Make them gluten-free: Swap the all-purpose flour with a gluten-free baking flour.
Switch up the fruit: Try using raspberries or blueberries instead of strawberries for a different twist.
Add a crunch: Sprinkle crushed graham crackers over the cookies before baking for a classic cheesecake crust effect.
