How to Make Easy Peppermint Bark
I have melted chocolate in a double boiler before, and honestly, I find a microwave much easier when melting chips. If you step up your chocolate game and use high-quality gourmet chocolates, you may want to pull out the double broiler. For today, we are going to stick with the microwave on this one.
Tools Needs:
Parchment paper
Microwave-safe bowls
Spatula
9×13 rimmed baking sheet
Ingredients:
18 oz dark chocolate chips
18 oz white chocolate chips
½ tsp peppermint extract
1 cup peppermint candy
Place the peppermint candy in a heavy-duty food storage bag. I usually cover the bag with a kitchen towel first and then pound the bag with a meat mallet or rolling pin until the candy is finely crushed. You can also do this in a food processor if that is easier for you.
Line your 9×13 rimmed baking sheet with parchment paper and set it aside.
Put the dark chocolate chips in a microwave-safe glass bowl and heat for 30 seconds. Stir the chocolate and microwave in 15-second intervals, stirring after each interval, until completely melted.
Pour the melted chocolate onto the center of the prepared baking sheet and spread it evenly with a spatula. Place the baking sheet in the freezer while preparing the white chocolate layer.
Place the white chocolate chips in a microwave-safe glass bowl and heat for 30 seconds. Stir chocolate and microwave in 15-second intervals, stirring after each interval, until completely melted. Once the chocolate is smooth, stir in the peppermint extract.
Remove the baking sheet from the freezer and pour the white chocolate mixture on top of the dark chocolate layer. Carefully spread with a spatula until evenly distributed over the dark chocolate layer.
Sprinkle the crushed peppermint pieces evenly over the top. Place the baking sheet in the refrigerator for at least 2 hours.
Once hardened, break the peppermint bark into pieces before serving or storing it in an airtight container.
If you plan to hand out your homemade peppermint bark as holiday gifts, place some tissue paper inside a holiday container.
