Cheesy Penne Pasta Pepperoni Pizza

While my kids are now grown and out of the house, I still like making some of their favorite meals, even if they aren’t home to enjoy them. It brings a sense of comfort, and always a rush of fond memories.

 

Today’s recipe is something that my kids loved growing up. It took two of their favorite things and mashed them together — mac and cheese + pizza!

 

Plus, it makes a great meal for busy weeknights. You know, those nights when you worked all day, raced around dropping off and picking up the kids from all their activities, and you need something satisfying yet simple for dinner? Yup, this is the perfect recipe for days like that.

Cheesy Penne Pasta Pepperoni Pizza Skillet

 

With minimal prep time and simple ingredients, it’s easy to whip up this quick and comforting meal your taste buds are going to love.

Ingredients:

10 oz. penne pasta, uncooked
1 tbsp olive oil
1 medium onion, diced
2 tbsp all-purpose flour
2 cups milk
1/4 cup heavy cream
3 oz. cheddar cheese, shredded
5 oz. fontina cheese, shredded and divided
1 cup marinara sauce (homemade or jarred)
3 oz. pepperoni slices
1/4 cup fresh basil leaves, chopped
Salt and pepper, to taste

 

How to Make the Recipe

 

Preheat the oven to 400°F. 

 

Bring a large pot of lightly salted water to a boil, then add your pasta and cook according to the directions on the package. Remove the pasta from the heat 1-2 minutes before becoming al dente so that it can finish cooking in the oven.

 

While the pasta is cooking, grab a large skillet. You can make this meal one of two ways:

 

  1. With an oven-proof skillet
  2. With a large skillet and a greased 9×9 casserole dish.

 

Use whichever method you find more convenient. I actually prefer to transfer to the casserole dish before baking so that I can place it directly on the table for serving straight out of the oven.

 

In your large skillet, heat up the olive oil over medium heat. Add the diced onion to the pan and season with salt and pepper to your liking. Sauté until the onion becomes soft and translucent, which should take about about 3-4 minutes.

 

Sprinkle the flour over the onion and cook, stirring constantly, for 1-2 minutes.

Slowly pour the milk and cream into the skillet. Be sure to constantly stir it so it doesn’t clump up. Let the mixture come to a gentle simmer and continue cooking and stirring until it begins to thicken, about 3-4 minutes.

Stir in the Italian seasoning, cheddar cheese, and half of the fontina cheese. Continue cooking and stirring until the cheeses are melted and the sauce is smooth.

 

Drain the cooked pasta and add it to the cheesy sauce, stirring until well combined. Remove the skillet from the heat.

 

This is the point where you woud transfer the mac and cheese into a greased casserole dish, if desired.

 

Top the mac and cheese with your marinara sauce, pepperoni slices, and the remaining fontina cheese, just as if you were topping a pizza.

Transfer the oven-proof skillet or baking dish to your preheated oven and bake for 15-20 minutes, or until the cheese is melted and bubbly.

Remove the skillet from the oven and garnish with thinly sliced fresh basil leaves. Serve hot and enjoy the cheesy, pepperoni pizza-inspired goodness!
