If you have seen any of my other recipes, you know that I am a huge fan of all things quick and easy. What you may not know is that I have been trying to limit my carb intake lately. I haven’t begun a keto diet, just choosing to eat fewer carbs. The hardest part for me in doing this is satisfying my sweet tooth. That is my downfall every. single. time.

 

What I enjoy about this mug cake is that I get all the yummy goodness of chocolate cake but without crazy carbs and sugar.

Low-Carb Chocolate Mug Cake

 

This dessert is perfect for when you want a single serving of chocolate cake.

 

Ingredients:

1½ tbsp coconut flour
½ tsp baking powder
1¾ tbsp cocoa powder, unsweetened
2 tbsp unsalted butter
1½ tbsp sweetener, granulated
1 egg
2 tbsp heavy cream
¼ tsp vanilla extract
¼ tsp salt

Optional:

fresh berries

Tools needed:

2 small mixing bowls

Gather your ingredients and your small mixing bowls. To one of your bowls, add the coconut flour, baking powder, and unsweetened cocoa powder. Mix to combine.

 

Melt the butter in another bowl in a microwave for several seconds. Add in the granulated sweetener and stir until it is completely dissolved. Crack in your egg, the heavy cream, vanilla extract, and salt to the butter mixture. Whisk it well making sure everything is combined.

Add the wet ingredients to the flour mix and stir until thoroughly blended. Pour the blended mixture into a microwave-safe mug and microwave it on high for 1 minute. Homemade cake in one minute? Yes, please!

 

Carefully remove the mug from the microwave and serve while warm. Top with fresh berries, if desired.

 

For more than a single serving, double or triple the recipe as needed and mix in a larger bowl. When it comes time to microwave the chocolate cakes, for best results, microwave them one at a time.

  • Add wet ingredients to the dry and stir until thoroughly blended. Pour blended mixture into microwave-safe mug and microwave on high for 1 minute.
  • Remove from microwave and serve immediately with fresh berries, if desired.
