Greek Yogurt Cheesecake Parfait

A creamy, layered parfait that is full of delicious goodness. Greek yogurt, cream cheese, fresh berries, and a crust of crushed nuts make this an irresistible treat.

 

Delicious and healthy! That’s how I would best describe this yummy treat. It is very versatile and makes a wonderful breakfast or dessert. I also love making these parfaits for brunch, along with my orange cranberry scones and orange chocolate chip muffins.

 

And best of all, who doesn’t love a no-bake cheesecake? I know I sure do. It has the sweet taste of a cheesecake but it’s enjoyed in a much healthier way.

Greek Yogurt Berry Cheesecake Parfait

 

This tasty treat is easy to put together and is bright and colorful with fresh strawberries, blueberries, and raspberries.

Ingredients

 

Cheesecake:
cream cheese softened
Greek yogurt
honey
vanilla extract
strawberries
raspberries
blueberries

Crust:
almonds
pecans
ground cinnamon

Tools:
food processor
mixer
large bowl
parfait dishes

 

In the bowl of a food processor, combine almonds, pecans, and cinnamon. Pulse until the mixture starts to form a ball and the nuts are nicely broken down. Divide the nut crust between 4 individual serving dishes and set aside.

 

In a large mixing bowl, beat the cream cheese, Greek yogurt, honey, and vanilla with an electric mixer until smooth. Set aside.

Divide half of the cheesecake mixture between the 4 serving dishes. Top with a layer of mixed berries. Repeat this process with the remaining cheesecake mixture and fresh berries.

 

Place the parfaits in the refrigerator for at least 2 hours to chill. To serve, garnish the parfaits with ground cinnamon if desired.

Ingredients
  

Cheesecake

  • 4 oz cream cheese softened
  • 1 cup Greek yogurt
  • 3 tbsp honey
  • 1 tsp vanilla extract
  • 1 cup strawberries chopped
  • 1 cup raspberries
  • 1 cup blueberries

Crust

  • ¼ cup almonds
  • ¼ cup pecans
  • ½ tsp ground cinnamon

Instructions

  • In the bowl of a food processor, combine almonds, pecans and cinnamon. Pulse until the mixture starts to form a ball and the nuts are nicely broken down. Divide the nut crust between 4 individual serving dishes set aside.
  • In a large mixing bowl, beat the cream cheese, Greek yogurt, honey, and vanilla with an electric mixer until smooth. Set aside.
  • Divide half of the cheesecake mixture between the 4 serving dishes and divide half of the berries among the individual dishes. Repeat this process with remaining cheesecake mixture and fresh berries.
