This quick and healthy salad is a splendid mix of cucumbers, tomatoes, and red onions mixed with Italian seasoning and dressing.

QUICK and EASY are two words I love when they are describing a meal I am about to make.
Cucumber tomato salad is a wonderfully light, yet filling dish to enjoy any time of year…but it is an absolute favorite of mine in the summer because it requires no cooking, and it’s refreshing on a warm day. There are only a few ingredients involved, which makes it super easy to prepare.
If you grow a garden in the summer, this is a fantastic way to put to use your cucumbers and tomatoes.
Cucumber Tomato Salad
It takes no time to whip this together. It makes a perfect accompaniment for any meal – or it can be a meal all by itself. I, personally, prefer to have it for lunch. You can make this the night before, and then toss it in a lunch bag the next day, and it’s good to go. All you’ll need is a fork.
Ingredients:
2 large cucumbers
1 1/2 cups of grape or cherry tomatoes
1/2 red onion
1/3 cup Italian salad dressing
1 tbsp Gourmet Collection Salad Spectacular
salt & pepper, to taste

Wash and dry your cucumbers and tomatoes. Peel your cucumbers. You can either slice them or dice them, it is completely up to you. Cut the tomatoes in half. Slice the red onion. Toss the cucumbers, tomatoes, and onion into a large mixing bowl.
Pour in the Italian dressing. Add the Italian seasonings, and salt and pepper as desired. Mix well.
Place it in an airtight container and put it in the refrigerator for at least a half-hour before serving, so the flavors can meld together.
Variations for Cucumber Tomato Salad
For this salad, feel free to use what you have on hand.
Cucumbers – English cucumbers (seedless) or garden cucumbers are perfect for this salad. You decide if you want to peel them entirely or partially. I don’t personally care for completely unpeeled cucumbers because the skins tend to be waxy and bitter.
Tomatoes – If you don’t have grape or cherry-sized tomatoes available, just cut larger tomatoes into bite-size pieces. I actually prefer using Roma tomatoes, but whichever you prefer will work just fine.
Onion – You can substitute a white onion for the red, but trust me, the red onion really does add a ton of flavor.
Dressing – Use your favorite low-cal or fat-free Italian dressing, or if you prefer, some lemon juice and olive oil instead of store-bought dressing.
Seasoning – If you have ever tried Salad Spectacular spice blend, then you know just how awesome it is! However, if it isn’t available to you (you can find it on Amazon, I’ve also picked it up at Home Goods and Christmas Tree Shop) then substitute it with Italian seasoning.

Ingredients
- 2 large cucumbers
- ½ red onion
- 1½ cups grape or cherry tomatoes
- ⅓ cup Italian dressing of choice
- 1 tsp Gourmet Collection Salad Spectacular Spice Blend
- salt & pepper to taste
Instructions
- Wash and dry cucumbers and tomatoes. Peel and dice cucumbers. Slice onions. If tomatoes are too large, cut in half.
- Place cucumbers, onions and tomatoes in a large bowl. Pour in the Italian dressing, add spice blend and mix well. Salt and pepper, to taste.
- Place in refrigerator, in sealed container, for at least half-hour before serving.
