BLT Sandwich with Avocado Spread

This classic bacon, lettuce, and tomato sandwich on grilled sourdough bread features an avocado spread instead of traditional mayo, for a healthy twist.

 

Have you ever been in the mood for a meal that will be satisfying and comforting that can be whipped up quickly? That’s where I was the other day. It was cool outside, I’d had a long day, I was hungry…and yet I was feeling lazy. All I wanted to do was sit down and enjoy something delicious without any fuss.

 

Enter the BLT! 

 

You can never go wrong with this sandwich. I dressed it up a bit with a homemade avocado spread and it took an already great sandwich to a whole new level.

BLT with Avocado

 

A BLT sandwich makes a fantastic lunch. Add a salad or bowl of soup and you’ve got a filling dinner.

How to Make Avocado Sandwich Spread

 

To jazz this sandwich up, I added an avocado spread to replace the mayo. It’s quick and easy to make, and it adds great texture and flavor.

 

Avocado, Greek yogurt and Lime Juice

 

Avocado Spread:

1 large avocado, cut into small chunks
½ cup Greek yogurt
1 garlic clove, minced
1½ tbsp fresh lime juice
1½ tsp ground cumin
Salt & pepper, to taste

 

In a medium mixing bowl, combine the avocado chunks, Greek yogurt, and garlic with a fork. Add in the lime juice, cumin, and season with the salt & pepper, to taste. Cover tightly and set aside.

 

Avocado BLT Sandwich

 

 

Sandwich:

6 slices thick-cut bacon, cooked
2 tbsp unsalted butter, melted

4 slices sourdough bread
8 leaves Bibb lettuce
1 large heirloom or beefsteak tomato
Salt & pepper to taste

 

Brush one side of each piece of bread with the melted butter.

 

Heat your grill pan over medium heat and place the bread, buttered side down, on the pan. Apply light pressure to each slice with a spatula, being very careful not to move the bread in the process. Remove from the heat and set aside, once nice grill marks have formed.

 

Avocado sandwich spread

 

Allow bread to cool slightly, then add the avocado sandwich spread to 2 of the slices on the non-grilled side.

 

Divide up the lettuce, tomato, and cooked bacon slices between the two sandwiches and top each with the remaining pieces of grilled bread.

Ingredients
  

Avocado Spread
